Can Sumoi Ancestral Parellada is a sparkling wine made from Parellada grapes sourced from vineyards located at an altitude of 550 meters on clay-limestone soils, planted in the traditional bush style.
After a manual harvest, the grapes are destemmed and gently pressed in an inert atmosphere. The must macerates for 4 hours with the skins, and fermentation begins in stainless steel tanks at a controlled temperature of 16°C, using indigenous yeasts from the vineyard. The fermentation is completed in the bottle, where it rests for a few months before being released to the market.
