The Dominio de Calogía Tinto 2020 is a significant wine from the personal project of José Manuel Pérez Ovejas, a key figure in Ribera del Duero. Made exclusively with old Tinto Fino grapes, this wine offers a precise and harmonious view of modern Ribera. The grapes are meticulously cared for in plots around the winery in the Calogía area. The process includes fermentation with native yeasts and aging for 14 months in French oak barrels from the Allier forest, achieving a blend of power and elegance. On the nose, it presents intense notes of red fruit, blackberry, plum, and hints of cocoa, alongside a balsamic background. On the palate, its balance and freshness are evident, with fine tannins and acidity that adds tension and aging potential, resulting in a long and elegant finish. It is recommended to serve it between 16 and 18 ºC, ideal for pairing with roasted lamb, red meats, and Castilian stews.
