GarageWine Cencibel 2021 represents an effort to recover the genuine character of the Cencibel variety through respectful viticulture and minimally invasive winemaking techniques. The vines, grown without irrigation in Castilla-La Mancha, provide grapes that ferment using native yeasts. No clarification or filtration is performed, thus preserving the authenticity of the vineyard. The 2021 vintage showcases excellent balance with a marked fruity and mineral expression. Aromas of cherry, raspberry, and plum combine with mineral and spicy notes. On the palate, it is juicy and balanced, with fine tannins and a lasting fruity finish. Ideal for pairing with grilled meats, cold cuts, rice dishes, and aged cheeses. Its limited production makes it an exclusive wine for special occasions.
