Las Envidias 2020 is probably the most singular wine of the Parajes del Infierno trilogy. This project, led by Beatriz Herranz, aims to revive old parcels of traditional varieties in Castilla and León. Initially thought to be "Verdejo Mayor", it turned out to be Palomino, leading the winery to draw inspiration from the methods of the Marco de Jerez. Originating from a small century-old plot in Alcazarén, the wine undergoes spontaneous fermentation and ages under a veil of flor for about a year. As a result, it presents aromatic complexity on the nose, with notes of resin, dried fruits, almonds, and a spicy touch, alongside dried citrus. On the palate, it is salty, tense, and gastronomic, with a granular texture, great freshness, and clean acidity, highlighting the memories of dried fruits and yeasts. Its minerality, persistence, and certain influence from biological aging give it a unique identity, making it a cult reference among minimally intervened whites from Castilla and León.
