Emeritus wine is made from grapes harvested from 40 hectares of vineyards about 30 years old planted on limestone soils at an altitude of over 500 meters above sea level. The grapes are harvested by hand using small boxes to transport the bunches. Once in the winery, the grapes are destemmed and undergo a long maceration of up to 4 or 5 weeks.
The wine is then aged in new and semi-new French Allier oak barrels for 24 months.
Its intense dark red color is very bright and reminiscent of ripe cherries, with a very intense nose that combines aromas of fruit and sweet spices (vanilla, cinnamon...) with toasted notes from its aging. In the mouth, it has an intense entry and tamed tannins. Its flavor confirms the fruity notes that we already perceive in the olfactory phase and that accompany us for a long time in the mouth after drinking it.
