Own vineyards located in the Finca Ygay. The Ygay vineyards occupy an area of 300 hectares surrounding the winery, in the Rioja Alta, with an altitude difference from 320 meters to 485 meters. Made from 93% Tempranillo, 4% Mazuelo, 2% Graciano, 1% Garnacha. The grapes are harvested by hand, the bunches are destemmed and gently crushed. The varieties are fermented separately in stainless steel tanks, with temperature control. Vatting lasts 8 days, during which time the must is pumped over and pumped down to encourage contact between the must and the skins, and to promote a slow and natural extraction of aromas and polyphenols. After fermentation, the solid parts of the grapes are pressed in vertical presses in a slow and gentle process that favors the extraction of color and ripe tannins that reside in the skins.Aged for 2 years in American oak barrels of 225 liters of capacity, of which 8 months are spent in new oak barrels, and then rounded off with a 24-month rounding off in the bottle.
