Matalaz 2023 is a red wine produced by Oxer Bastegieta , the Basque winemaker behind Oxer Wines , known for crafting expressive, terroir-driven wines with minimal intervention. Although his main project is based in Rioja, with Matalaz he explores the character of Garnacha from the Sierra de Gredos , a mountainous region known for producing elegant and fresh wines.
The grapes come from vineyards located on high-altitude slopes in the province of Ávila , where Garnacha grows on poor granite soils that provide tension, minerality and finesse. The mountain climate, with strong temperature differences between day and night, allows for slow ripening and helps preserve the natural freshness of the grapes.
The harvest is carried out by hand , with careful grape selection. In the winery, the wine is made following a low-intervention philosophy , with spontaneous fermentations using native yeasts and gentle extraction to maintain the purity of the fruit. The wine is then aged in tanks and used oak barrels , adding texture while preserving the varietal character of Garnacha.
On the nose it offers aromas of fresh red fruits such as cherry and raspberry , accompanied by floral notes, subtle spice and a mineral background typical of Gredos wines. On the palate it is fresh, elegant and well balanced , with fine tannins, lively acidity and a long, delicate finish.
It is a versatile wine that pairs beautifully with poultry, white meats, mushroom dishes, rice-based meals and Mediterranean cuisine , and it can also be served slightly chilled to highlight its aromatic precision and freshness.
