Navazos Niepoort 2020 is a unique white wine resulting from the collaboration between Equipo Navazos, a group specialized in rescuing traditional Andalusian wines, and the prestigious Portuguese producer Dirk Niepoort. This wine comes from Palomino Fino vineyards grown in the historic albariza soils of the Jerez area, a terroir known for its ability to express a mineral and saline character in this variety. The winemaking follows methods that pay tribute to the ancient white wines of the region. After pressing, the must ferments in oak barrels with indigenous yeasts and remains for about a year under a layer of flor, allowing for biological aging similar to that used for Finos and Manzanillas. This gives it a lower alcohol content and a fresher sensory profile. On the nose, this wine presents aromas of apple, aromatic herbs, and saline notes, along with a slight hint of almonds. On the palate, it is fresh, mineral, and very balanced, with vibrant acidity and a long finish where the characteristic aspects of albariza soils are present.
