Navazos Niepoort 2020 is a unique white wine born from the collaboration between Equipo Navazos , a group specialized in rescuing traditional Andalusian wines, and the renowned Portuguese winemaker Dirk Niepoort. It comes from Palomino Fino vineyards grown on albariza soils in the Jerez area, a historic terroir where this variety shows a particularly mineral and saline character.
The wine is made following methods inspired by the old white wines of the area. After pressing, the must ferments in oak barrels with indigenous yeasts and then remains for about a year under a veil of flor , a biological aging process similar to that of finos and manzanillas, although with lower alcohol content and a fresher profile.
The nose shows aromas of apple, aromatic herbs and saline notes , accompanied by light hints of almonds. The palate is fresh, mineral and very balanced , with lively acidity and a long finish with the characteristic touch of flint and salinity typical of the albariza soils. It is a very gastronomic wine that goes especially well with seafood, fish, Iberian ham or appetizers.
