Pago de los Capellanes A Dream in the Heights 2022 is a unique expression of the Ribera del Duero, crafted in the highest and coldest areas of the southern region. Sourced from plots in Fuentenebro, Pardilla, and Honrubia de la Cuesta, this wine captures the freshness, minerality, and Atlantic expression of Tempranillo. The vineyards, aged between 50 and 60 years, grow in clay and siliceous soils enriched with gneiss and quartz. The vinification process includes cold maceration, fermentation with native yeasts, and a 12-month aging in French oak fudres, unclarified and unfiltered, preserving its authentic personality. The nose presents notes of cassis, raspberry, blueberry, and blackberry, complemented by aromatic herbs, menthol, and delicate spices.
