Pago de los Capellanes A Dream In The Heights 2021 is an exceptional wine from Ribera del Duero, crafted in the highest and coldest areas of the south, specifically in plots of Fuentenebro, Pardilla, and Honrubia de la Cuesta. This wine, made from old Tinto Fino vines aged 50 to 60 years, is cultivated in poor clay and silty soils. The winemaking process includes cold pre-fermentative maceration, fermenting with indigenous yeasts, and aging for 12 months in French oak foudres. The entire process aims to preserve the purity of the vineyard and the identity of the terroir.
