Pago de los Capellanes Finca El Picón 2021 is an exceptional single-varietal red wine made from Tempranillo, carefully crafted in the D.O. Ribera del Duero in Spain. This wine stands out for its delightful spicy and toasted notes that enhance its fruity richness. The winery, located on a Burgos estate that has gained world recognition, was acclaimed by Decanter when they selected its 2007 vintage as the best in the Ribera del Duero. The connection with nature and tradition is reflected in every bottle, as the grapes are hand-harvested in 15 kg boxes and processed with great care. Upon arriving at the winery, the grapes rest in cold chambers for 24 hours, preserving their optimal characteristics before fermenting in French oak vats. Throughout a meticulous process of fermentation and aging, the wine develops over 22 months in barrels, culminating its journey with at least 40 months of resting in the winery before sale. This leads to a balanced wine with great body and depth, ideal for enjoying on special occasions or to accompany a good meal.
