Pago de los Capellanes Joven Roble 2025 is an iconic red wine from the D.O. Ribera del Duero, produced by the winery Pago de los Capellanes. This wine, made exclusively from the Tempranillo variety, also known as Tinto Fino, benefits from the careful winemaking process of the winery. After a brief cold pre-fermentation, the wine undergoes spontaneous alcoholic fermentation followed by malolactic fermentation at 20 degrees, which lasts for 24 days. The wine matures for 5 months in new French oak barrels, imparting complexity and a distinctive aromatic profile. The production of the winery, initiated in its family vineyard in Pedrosa de Duero, focuses on maintaining quality by limiting production to 5,000 kg of grapes per hectare. This artisanal approach ensures that each bottle offers an authentic reflection of the Ribera del Duero terroir.
