The Rafael Palacios Sorte O Soro 2022 is regarded as one of the great white wines of Spain. Made exclusively from the Godello variety, this wine comes from a single plot planted in 1978 in the heart of the Bibei Valley. The vineyard, at 710 meters high, is on decomposed granite and quartz schist soils, cultivated using traditional, ecological, and biodynamic practices. Fermentation takes place with indigenous yeasts in 500-liter barrels, with aging of around 8 months on its lees to develop remarkable depth and texture. On the nose, the wine features elegant aromas, including notes of mandarin peel, white flowers, magnolia, stone fruit, and mineral hints. These are complemented by balsamic nuances and a strong sense of purity. On the palate, the Sorte O Soro 2022 shows extraordinary acidity that adds freshness, while the silky texture and wood integration offer a harmonious whole. The finish is long and saline, reflecting the granitic character of the vineyard. It is suggested to serve between 10 and 12 ºC, ideal for pairing with seafood, noble fish, and high-end Atlantic cuisine.
