Hipperia 2022 is the flagship red wine of Pago de Vallegarcía , an estate located in the Montes de Toledo near the Cabañeros National Park in central Spain. The vineyards were planted in the late 1990s at around 850 metres above sea level , on poor, acidic soils composed of slate and quartzite that contribute minerality and freshness to the wines.
The wine is a Bordeaux-style blend , dominated by Cabernet Sauvignon and Cabernet Franc, varieties that adapt particularly well to the continental climate of the region. The grapes are hand-harvested and carefully selected before fermentation to ensure the highest quality fruit.
After fermentation, the final blend is assembled and aged for around 18 months in new French oak barrels , allowing the different varieties and the oak influence to integrate harmoniously. The wine then spends additional time ageing in bottle before release, further refining its structure and complexity.
On the nose it displays intense aromas of black fruits such as blackberry, plum and cassis , alongside hints of Mediterranean herbs, balsamic notes and spices , supported by a subtle mineral background. On the palate it is powerful, structured and elegant , with fine tannins, depth and a long, persistent finish.
It pairs beautifully with roasted meats, grilled dishes, game, stews and aged cheeses , where its structure and complexity can fully shine.
