Ingredients: 100% ternera Parda de Montaña de nuestra propia ganadería.
Ossobuco Thor's Hammer. Thor's Hammer is undoubtedly one of the great cuts that combines presence, juiciness, tenderness, and flavor. Sourced from the lower parts (shanks) of our calves' legs, it is stripped of the upper area and tied to maintain its shape during cooking. Essentially, it is the heart of the shank with a special bone for roasting.
It is ideal for low-temperature cooking with sous vide (10 hours at 80ºC), stewing, or slow roasting alongside vegetables. Its presence after cooking will leave none of your diners indifferent and will be the centerpiece of the table. Once you try it, you will want to enjoy this cut again and again.
All our calves grow in a privileged environment surrounded by vegetation and pasture, and they are fed and cared for under the strictest and most meticulous standards. This has led us to be the first livestock farm to obtain the Aenora animal welfare certificate for a meat production facility, and we are very proud of that.
