The artichoke is a highly digestible food, rich in fiber and low in calories. It contains calcium and phosphorus, as well as vitamins B1, C, B3, B5, and B6. It reduces cholesterol and has diuretic properties. Artichokes can be consumed in many different ways, usually cooked, roasted, fried, battered in flour, or even in an omelet. They can also be used in mixed vegetable dishes, stewed, or sautéed with peas and ham, etc., as a side dish with countless dishes.
How to store and prepare them?
For proper storage, keep them in a cool, dry place. If you want to store them in the refrigerator, you have two options: in a closed plastic bag or submerged in water with the stem, like a flower. Once cooked, they can be frozen.After cutting them, rub them with lemon to prevent browning. To keep them tender, you can add a little lemon juice and a teaspoon of flour to the cooking water. When cooking artichokes, it's advisable to avoid prolonged boiling because "overcooking" affects their flavor and texture.
Artichokes can be consumed raw in salads, dressed with a few drops of oil, salt, and pepper. They can also be baked with ham or salted anchovies, covered with béchamel and gratinated. Tip!: To prevent artichokes from turning black, place them in cold water with a bunch of parsley before cooking.
