Rosé sparkling wine from Bodegas Noc, 2022 vintage, made from 100% Tempranillo grapes using the Champenoise method. Salmon-coloured, it offers aromas of red fruit and bakery notes, with a fresh, balanced palate and delicate bubbles. 75 cl bottle, 12% vol.
NOC Brut Rosé sparkling wine, 2022 vintage, made from 100% Tempranillo grapes and identified as IGP Vino de la Tierra de Castilla. It is presented in a 75 cl bottle and has an alcohol content of 12% vol. It is described as the first Brut produced in the Montes de Toledo. The grapes come from Bodegas Noc's own vineyards in Los Yébenes: 4.8 ha of gravel and clay soils, at 850 m altitude and with 25% slopes. The harvest is done by hand so that the grapes reach the winery in perfect condition. It is made using the Champenoise method, with a first fermentation in stainless steel, a second fermentation in bottle and subsequent aging on lees. Clarification is done manually, using old concrete riddling racks, and disgorgement is then carried out. Only 7000 bottles of this sparkling wine are produced. It has a bright salmon colour and aromas of red fruit with light bakery notes. On the palate it is balanced, fresh and fruity, with delicate bubbles and a pleasant finish.
