Pío del Ramo presents the Pío Roble Red Wine from the Protected Designation of Origin Jumilla (Spain), a wine made from the varieties Monastrell, Syrah, and Cabernet Sauvignon, sourced from certified organic farming. This red wine represents the freshest and most accessible expression of the winery, without compromising the Mediterranean character and the identity of the Jumilla terroir.
The vineyards are located on poor organic matter soils, mainly limestone and sandy for the Syrah and Monastrell varieties, while the Cabernet Sauvignon is grown in plots with a higher clay content. This diversity of soils allows for balanced grapes, with good concentration and a complex aromatic profile. The Monastrell is cultivated in bush training, respecting the tradition of the area, while the other varieties are trained on trellises, promoting uniform ripening.
The harvest is done manually, with a double selection: first in the vineyard and then in the winery, ensuring that only the grapes in optimal condition become part of the wine. The alcoholic fermentation takes place in temperature-controlled stainless steel tanks, preserving the primary fruit aromas. The maceration lasts approximately 15 days, achieving a balanced extraction of color and tannins, without losing freshness or smoothness.
After fermentation, the wine undergoes aging for 4 to 6 months in French and American oak barrels, where it gains complexity, structure, and spicy notes, while always maintaining the prominence of the fruit. This brief aging adds roundness and elegance, making this red wine versatile and very pleasant.
In the glass, it presents a deep cherry red color with violet reflections. On the nose, there are prominent aromas of ripe red and black fruit, accompanied by spicy notes, vanilla, and light toast from the barrel.
