The Palo Cortado Apóstoles Generous Wine, produced by Bodegas González Byass, is a jewel among Sherries. Founded in 1835, this winery has 1,844 hectares of vineyards in Spain and has gained international prestige for its exceptional quality. This Palo Cortado is mainly made from Palomino grapes (87%) and a small percentage of Pedro Ximénez (13%). This wine has the D.O. Jerez, which guarantees its origin and quality. The grapes are harvested in the "Marco de Jerez" and are carefully pressed to obtain a delicate must known as 'mosto yema'. This must then undergoes an aging process under the criaderas and soleras system in American oak barrels. This aging process lasts over 30 years, providing the wine with complexity and unparalleled character. On the palate, the wine is powerful and flavorful, with a slight sweetness that gives it a special balance.
