Figuero Viñas Viejas is produced in old bush vineyards with more than 60 years of age, in La Horra: Plots: El Castillo, La Calleja and San Cristóbal. Production 1 Kg/vine. Manual harvest carried out in 12 kilo capacity chestnut baskets, meticulous and immediate transport to the winery. Gravity-fed tanking, OVI system. Cold skin maceration for 2 days at 12ºC. Alcoholic fermentation at 29ºC. 2 manual punch-downs and délestage. Post-fermentation maceration for 14 days. Malolactic fermentation in November-December. Aging for 15 months in new barrels, 25% American and 75% French oak. Clarification with egg white.
Bottled and aged for 12 months in the same barrel before leaving the winery.
