Figuero Viñas Viejas is made from vines over 60 years old in the La Horra vineyards: El Castillo, La Calleja, and San Cristóbal. Production is 1 kg per vine. The grapes are hand-harvested in 12 kg chestnut baskets, with meticulous and immediate transport to the winery. Gravity-fed tank fermentation, OVI system. Cold skin maceration for 2 days at 12ºC. Alcoholic fermentation at 29ºC. Manual punch-downs and délestage. Post-fermentation maceration for 14 days. Malolactic fermentation in November-December. Aging for 15 months in new barrels, 25% American oak and 75% French oak. Clarification with egg white. Bottled and aged for 12 months before leaving the winery. Packaging: Glass bottle.
