Our Cantabrian anchovy fillets in olive oil in 120 gr. cans are "the-no-goes-more". We present them firm, hard, in layers separated by food paper to make it easier for you to remove them from the can and to keep the leftovers well covered in the refrigerator. As soon as the anchovies are caught, they are cleaned and beheaded. Then we put it in barrels in layers of anchovy and salt, anchovy and salt, anchovy and salt, anchovy and salt... to mature for at least 6 months, until it reaches its optimum point
