Authentic Boquerones en Vinagre del Cantábrico are the result of the maceration, using the traditional and natural method, of the best anchovies in white wine vinegar. This way, their natural color is obtained without the need of artificial whiteners. They have a high omega 3 content and have been treated against anisakis. They stand out for their large size and al dente texture

Origin and process

The elaboration of Casa Santoña's anchovies is carried out by completely artisanal methods. The anchovies are frozen for more than 48 hours to eliminate the possibility of anisakis. A treatment in vinegar for more than 24 hours and finally it is packaged in olive oil for direct consumption
