Alcoholic fermentation at 29ºC. 2 manual punch-downs and delestage. Post-fermentation maceration for 14 days. Malolactic fermentation in November-December. Aging for 15 months in new barrels, 25% American oak and 75% French oak. Clarification with egg white. Bottled and aged in the same for 12 months before leaving the winery.
