Stilton, the king of English cheeses; a blue cheese made from pasteurized cow's milk with a maturation period of between 3 and 4 months.
It has an intense flavor with notes of nuts and subtle spicy hints. A deep and complex artisanal product with aromas of toasted grain, moisture, and a finish of melted butter. Its texture is tender, creamy, and juicy.
Its natural rind has orange-brown tones, and its interior hides a pale yellow paste with a uniform blue-green marbling caused by the proliferation of the fungus penicillium roqueforti.
The peculiarity of Blue Stilton DOP is that it can only be produced in three counties of England: Nottinghamshire, Derbyshire, and Leicestershire. This particular one is made by the dairy Colston Bassett in the village of the same name located in Nottinghamshire county.
It is ideal as an appetizer with bread, breadsticks, or crackers, accompanied by pickles and our Lauresa sherry as a pairing.
