This life in the open air and careful feeding give rise to pieces of the highest quality, which we then slice by hand. Following our history and family tradition, during the slaughtering season we produce a top quality acorn-fed Paleta de bellota. Cured in our drying sheds in Santa Olalla del Cala between 30 and 36 months

This process is carried out during the montanera period in our own pastures, which gives it an extraordinarily refined yet powerful flavor. Tips for optimal tasting:
Before opening the bag, leave it at room temperature (20-25º) or place it in lukewarm water so that it loses its cold preservation. Then open the bag, take out the slices and carefully separate them one by one and place them on the plate. Wait 5 minutes for the product to air and recover its natural aromas. Once the bag has been opened, consume immediately.
