Elaboration and Aging

Conde de Haro Brut is a blend of the Viura and Malvasia grape varieties. It comes from the same area as the Prado Enea vineyards, high areas, but unlike them, it is oriented towards the north with the aim of protecting the vineyards from the heat that could alter the delicate varietal aroma necessary in cavas. The grapes are harvested towards the third week of September, about 15 days earlier than those dedicated to white wines. The harvest must be in 15-kilogram boxes to respect the integrity of the fruit. After passing through the selection belt, the clusters go to the press. Pressing is the most delicate moment to preserve quality, only the must from gentle pressing is used to make this cava. The must undergoes a first fermentation in 1,000-liter wooden tanks and is kept in them until the end of April.

From here, the second fermentation in the bottle is provoked. The wine is aged on the lees for a minimum of 14 more months.

Tasting Notes of Conde de Haro Brut

  • Appearance: The first impression in the glass is of very little oxidation; bright yellow-green tones. The foam formed in the glass is dense and persistent, giving an idea of its structural composition in the mouth.
  • Nose: On the nose, the character of acidic fruit and flowers dominates. At a second level, we find fermentative characteristics and those typical of bottle aging (honey, vanilla, liqueur).
  • Palate: It is velvety but fresh at the same time thanks to its high acidity. The combination of fruit/acidity/fine lees creates a surprising sensation of fullness in the mouth that invites you to continue tasting. On the finish, the fruit returns, this time with a greater dominance of spices that leave a pleasant memory for a few seconds to the taster. It is fully satisfying to consume at this moment, although, due to the characteristics of the vineyard, this cava has great aging potential.

Pairing

Conde de Haro Brut is ideal for pairing with Iberian ham, fish, and shellfish. It is recommended to serve at a temperature between 6-8ºC.
