Conde de Haro Brut is the latest venture of the renowned Bodega Muga in Rioja.
Conde de Haro Brut is a blend of the Viura and Malvasia grape varieties. It comes from the same area as the Prado Enea vineyards, high areas, but unlike them, it is oriented towards the north with the aim of protecting the vineyards from the heat that could alter the delicate varietal aroma necessary in cavas. The grapes are harvested towards the third week of September, about 15 days earlier than those dedicated to white wines. The harvest must be in 15-kilogram boxes to respect the integrity of the fruit. After passing through the selection belt, the clusters go to the press. Pressing is the most delicate moment to preserve quality, only the must from gentle pressing is used to make this cava. The must undergoes a first fermentation in 1,000-liter wooden tanks and is kept in them until the end of April.
From here, the second fermentation in the bottle is provoked. The wine is aged on the lees for a minimum of 14 more months.
Conde de Haro Brut is ideal for pairing with Iberian ham, fish, and shellfish. It is recommended to serve at a temperature between 6-8ºC.
