Depaula is a red wine from the D.O. Manchuela made exclusively from Monastrell grapes sourced from old, ungrafted vines located in a hamlet in the Tobarra area (Albacete). These vines, planted at over 800 meters above sea level, contribute a natural freshness and vibrant acidity that is uncommon for this variety. According to winemaker Juan Antonio Ponce, Depaula is the only wine from the winery that is fermented with destemmed grapes, a key decision to preserve the purity of the fruit and enhance a fresher and more accessible profile.

Appearance: Bright cherry red color, with violet hues that reflect its youth and vitality.
Aroma: Aromatic and expressive, with pleasant notes of ripe red fruit, especially strawberry, accompanied by sweet spices. Delicate balsamic nuances and hints of aromatic herbs emerge in the background.
Palate: Fresh and friendly entry, with good structure and a marked acidity that provides balance and smoothness. Tasty, light, and very easy to drink.
Winemaking
Fermentation takes place in 4,500-liter wooden tanks with indigenous yeasts, followed by aging for 7 months in 11,000-liter French oak foudres. This process allows for a subtle integration of the wood, respecting the varietal expression of Monastrell and the freshness of the wine to the maximum extent.
