The Amontillado Generous Wine of the Duke is made with 100% Palomino grapes and has a D.O. Jerez.
The harvest that takes place in the "Marco de Jerez" is of utmost importance for the production of the Amontillado Generous Wine of the Duke, the grapes are handpicked to ensure they arrive in optimal condition at the winery. Upon arrival at the winery, the grapes are carefully pressed without crushing the stems, seeds, and skin. The juice obtained from this first pressing is known as "yolk must" and is the most delicate and elegant.
The wine is aged using the criaderas and soleras system in 550-liter American oak casks. The wine remains in the solera for approximately 30 years. During this period, the wine ages under a layer of yeast called "flor" which gradually disappears, allowing for oxidative aging that gives it its amber color.
Bodegas González Byass was founded in 1835 and currently has 1,844 hectares of vineyards throughout Spain. Their wine production satisfies national and international palates. This winery is likely the most well-known Spanish wine group worldwide thanks to its sherries.
