Elaboration and Aging
Hacienda Monasterio Crianza is made from the Tinto Fino variety (the most representative of Ribera), complemented with a small percentage of Cabernet Sauvignon and Merlot varieties. The grapes are harvested completely manually and transported to the winery in small plastic boxes. Once in the winery, only the bunches in the best conditions are selected. For the elaboration of Hacienda Monasterio Crianza, after complete destemming, the grapes macerate for 24 days. Subsequently, fermentation is carried out solely with the natural yeasts from the vineyard itself.
After vinification, Hacienda Monasterio Crianza spends 17 months in French oak barrels from Allier (30% new barrels and 70% barrels used for 3 wines) with racking every 3 months.
Tasting Note of Hacienda Monasterio Crianza
- Appearance: Hacienda Monasterio Crianza is a wine with a very bright ruby red color.
- Nose: The nose is characterized by very mineral aromas and a lot of red fruit, with small hints of black licorice and balsamic aromas of eucalyptus. Very aromatic nose in perfect harmony with the subtle aromas provided by the wood aging.
- Palate: The entry on the palate is smooth and silky, giving way to a balanced structure marked by a very integrated acidity whose presence brings freshness and persistence, with an aftertaste of red fruit and minerals. Very fine, long, and elegant palate.
Balance, finesse, and freshness are the great characteristics of this wine with great aging potential.
Pairs well with
Hacienda Monasterio Crianza is ideal to accompany cured meats, stews, grilled red meats, game, aged cheeses, and roasts. It is recommended to serve at a temperature of 16ºC.
