100% Iberian acorn-fed ham. “Pata Negra”
Ham is the noble piece par excellence. It comes from animals over 22 months old and weighing 160 kilos. The hams are simply added with sea salt and, after a brief period of salting, they first go to the drying room and then to the cellar. In total, more than 36 months of curing and maturation, during which chemical changes and formation of aromatic compounds occur, resulting in a loss of around 35% of its fresh weight.
The characteristics of 100% Iberian acorn-fed hams include the “pata negra”, synonymous with the authenticity of its genetics, and the thin cane. Among its attributes are the “flavour” (smell, taste, and combined texture), the shiny lean meat, and the smoothness of the fat, which are unmistakable and give rise to a series of sensory perceptions when tasted, awakening the senses and enhancing its unbeatable “bouquet”.
These are 100% Iberian acorn-fed hams, fully certified by accredited certifying entities according to the Ibérico Regulation contained in Royal Decree 4/2014.
