The Iberian bait palette, 50% Iberian breed, comes from Salamanca and its drying process takes place in the southern mountains of Andalusia, with a minimum of 20 months of curing. It is a shoulder with the perfect amount of salt, an incredible flavor, and a meaty texture. This palette will delight our palate.
