Iberian salchichón is a food with a high protein and monounsaturated fatty acid content, as it comes from Iberian pork. It is a source of heme iron, zinc, phosphorus and selenium. As for its vitamin content, it contains thiamine, riboflavin, niacin and vitamin E.

Cured sausages are those which are made from a mixture of minced meat, seasonings and spices and which are subjected to a maturation process, leaving them to dry until they acquire a certain consistency.
