Lalume is a Ribeiro Denomination of Origin white wine produced by Dominio do Bibei Winery.
The only grape variety used to make Lalume is Treixadura, from vineyards aged between 10 and 30 years old, on different soils in the Avia, Arnoia and Miño Valleys. Lalume is aged in 600-litre barrels, 1,200-litre and 2,400-litre Austrian oak casks, ovoid concrete tanks and 2,000-litre stainless steel tanks.
It then rests partly in 10,000 litre stainless steel tanks in contact with its fine lees. This wine from Dominio do Bibei does not undergo malolactic fermentation.
