On the slopes of a mountain in the Valencian village of Fontanars dels Alforins is the Monastrell variety with which the Casa Los Frailes winery makes this red wine
We are talking about an estate wine, coming from several plots of Casa Los Frailes from 25 year old Monastrell vineyards in rigorous dry farming
All the grapes are harvested by hand as all the Monastrell is in goblet. Both malolactic fermentation and ageing for 4-5 months are carried out in the old 18th century wine presses that the friars used to make the wines.

The Monastrell comes from several plots of the Casa Los Frailes estate at an altitude of 650 meters, the soils are of alluvial origin, deep, silty-sandy and on the surface red and yellow limestone stones. These soils, being richer than the rest of the soils on the estate, harbour a large amount of spontaneous plant cover, providing grazing for the sheep and attracting beneficial insects and songbirds. The freshness, optimum acidity and delicate floral aromas imparted by the deep soils and altitude are present in these estate wines. The entire vineyard is goblet-planted and divided into different plots planted in 1987, 1988, 1991 and 1992, the average being about 25 years old.
