Elaboration and Aging

Malleolus is a wine with the Ribera del Duero Designation of Origin made 100% from Tinto fino grapes. Malleolus, translated from Latin as "majuelo," is the term used to refer to vineyards in Pesquera de Duero. With its creation, the categories of crianza, reserva, and gran reserva are replaced by wines with their own identity. Cultivated from vineyards between 25 and 75 years old, it represents a turning point in the history of Emilio Moro.

The wine has been macerated with the skins for 18 days and then undergoes malolactic fermentation in French oak barrels. It has been aged for 18 months in new Allier French oak barrels until the moment of bottling.

Tasting Notes of Malleolus

  • Appearance: Malleolus has a mature cherry color with a covered background and garnet edge in a thin layer.
  • Nose: On the nose, it is a very intense wine where black fruit in jam predominates, along with balsamic and aromatic wood notes. Spicy aromas of cloves and coffee also stand out, with clayey mineral touches.
  • Palate: On the palate, it is powerful and concentrated with great balance. On the retro-nasal passage, the spices, black fruit, and aromatic woods reappear. The mouthfeel is velvety with excellent integration between fruit and wood.

Pairing

Malleolus is ideal for pairing with meat-based rice dishes and spicy stews. It is recommended to serve at a temperature of 16ºC.
