Matsu means "to wait" in Japanese, and it is perhaps the concept that best defines this wine - waiting for the wine to mark what it needs in each phase and waiting for the right moment to enjoy it. Thus, Matsu El Viejo is a wine that retains all the power and personality of Toro wines but with the smoothness and elegance of a modern wine.
Varieties: 100% Tinta de Toro. Vineyards and Winemaking: Selection of very old vineyards with very low production, cultivated using biodynamic techniques. Fermentation and maceration for 3 weeks in concrete tanks of 10,000 kg. Malolactic fermentation is carried out in new French oak barrels, as well as aging for 16 months. This wine has not been filtered and has been clarified without using aggressive procedures. Tasting Note: Sight: Deep cherry red color, high layer, with violet notes on the edge. Nose: Great aromatic intensity, with aromas of ripe black fruits, well integrated with toasted, spicy and smoky notes from the barrel. Palate: In the mouth, it is full-bodied and fleshy with very ripe and round tannins that make it sweet. The aftertaste is long and persistent, with the notes of ripe fruit very well integrated with the toasted notes from the wood.
