After remaining 24-48 hours in chambers at 5-7ºC. Then, the grapes are destemmed and a conveyor belt transfers them to a 5000-liter tank. Fermentation is carried out by native yeasts, which have been identified and selected in all the plots, achieving our own yeast bank. Malolactic fermentation takes place in the tank after racking.
