It stands out for being a cold-pressed olive oil. The cold pressing of the oil is an exclusively mechanical extraction method that is carried out at low temperatures, thus preserving the proportion of essential fatty acids, vitamin E, natural antioxidants, and does not require any additives. The first extraction, called "first press," results in a pure and truly oily fruit juice.
This olive oil comes from fully organic agriculture, from olive trees that are not treated with any type of synthetic fertilizers or pesticides.
The olives are crushed in a completely artisanal way in the old conical granite stone mill. The olives are hand-picked from the tree one by one, and quickly transported to the washing line to remove all impurities.
Subsequently, they are crushed with granite stones. 3 large granite stones weighing over 1000 kg each, rotating at a speed of 18 turns per minute. In a hydraulic and cold press, the olive juice is obtained.
From this first press, this extra virgin olive oil is obtained.
