PROPERTIES: Azuki beans contain much more protein than lentils, as well as complex carbohydrates. They also have a very low level of unsaturated fats and a high fiber content, making them highly recommended for cholesterol control. They are a small, round, red legume with a sweet flavor that stands out for its high content of plant-based proteins. They facilitate digestive processes, have purifying properties, and help minimize kidney problems. They are highly diuretic and help reduce cholesterol levels and control hormonal functions in case of depression, stress, or anemia. Azuki beans also have the advantage of being easily assimilated by the body and do not produce intestinal gas or flatulence like most legumes. Additionally, despite being sweet, they do not have a high sugar content.
PREPARATION: Wash and soak the azuki beans overnight. When cooking them, remember that one cup is enough for four people. The ratio is three cups of water to one cup of azuki beans, and if you want to make a soup, the water ratio increases to 5 cups. They should be cooked for at least 30 minutes in a regular pot. It is advised to add kombu seaweed during cooking to make them more digestible. Salt should be added at the last moment, as it slows down softening and alters the taste. They can be prepared in different ways: in soup, mashed, in salads, with rice, and they are also an excellent ingredient for cakes and desserts.
