Harvested by hand , the grapes go to the press after destemming. The must undergoes natural racking in a steel tank and the following day is racked intonew500-literFrench oakbarrels for the alcoholic fermentation. This lasts 25 days , after which it is racked and aged again in the same barrels with its lees , with regular batonnages, for6 months. In February , after a gentle clarification, it is bottled.
