Production and aging
Pinna Fidelis Crianza 2018 is made with 100% Tempranillo grapes. The harvest is carefully done manually, selecting the best plots based on parameters such as soil type, sun exposure, and location of the plot. Once the grapes are harvested, the wines macerate for 35 days in order to extract the full potential of the grapes and obtain powerful and elegant wines.
Aging for 12-14 months in French and American oak barrels, periodically performing "batonages" in them, filling and racking the barrels in spring and autumn. Finally, it is clarified with egg white.
Tasting note of Pinna Fidelis Crianza 2018
- Appearance: Pinna Fidelis Crianza has a very covered cherry red color with violet tones in a thin layer.
- Nose: Red fruit (raspberry and redcurrant) and black fruit (blueberry and blackberry), well combined with spicy tones like vanilla and clove. Light cedar tones.
- Palate: Meaty and unctuous with perfectly integrated tannins. It has a long and very pleasant aftertaste that invites further tasting.
Pairing
Pinna Fidelis Crianza is ideal to accompany red meats, roasts, ham, aged cheeses, lamb stews, and Burgos black pudding.
It is recommended to serve this wine at a temperature between 15 and 17ºC.
