Elaboration and aging

Prado Enea is a blend of 80% Tempranillo, 20% Garnacha, Mazuelo, and Graciano varieties. Along with the Torre Muga grapes, the Prado Enea grapes are always the last to enter the Winery. With this, we ensure optimal ripening. The grapes always ferment in 10,000 kg oak tanks without temperature control or the addition of yeast. The maceration is variable but can last up to twenty days.

The aging of this wine is 12 months in 16,000-liter oak tanks, thirty-six months in oak barrels (minimum), and thirty-six months (minimum) in the bottle. After aging, a light clarification is made with fresh egg white.

Tasting note for Prado Enea

  • Appearance: Prado Enea has a polished ruby red color, very pure and bright.
  • Nose: In aroma, clearly differentiated forest fruits are perceived: blueberries, sloes, wild berries, even notes of blackberries. All of this is flanked by finely intermingled low mountain herbs with very subtle perceptions. The oak spices are barely perceptible as they are very integrated, but we can sense cloves, coconuts, and vanilla.
  • Palate: The entry on the palate is unctuous and dominant, in a few seconds we have a sensation of intense and lasting fullness. Without a doubt, it is the most surprising phase of the wine. The acidity is present but gentle, the tannins very sweet and polished, and the minerality has an infinite character. In the aftertaste, the descriptors are reversed, with the dominance of low mountain herbs, perhaps with slightly different nuances like dill, fennel, mountain tea. Almost in its fading, notes of fine oak reappear.

Pairing

Prado Enea is ideal to accompany game stews, big game, and roasts. We recommend decanting before consuming. Ideal serving temperature 16ºC.
