Both varieties are harvested on the same day manually, with a rigorous cluster selection. Then the Cabernet Franc also destemmed is added, placing it directly on the Malbec. The co-fermentation process enhances the harmony between both varieties.
During the pre-fermentation maceration, closed pumpovers are carried out to gently extract aromatic compounds and tannins. During the fermentation, pumpovers and gentle punch downs are continued, prolonging the contact with the solids between 30 and 40 days. The aging takes place for 12 months in 500-liter French oak barrels, followed by a long bottle aging before being released to the market.
The result is a red wine of great complexity, with aromas of ripe fruit, fresh herbs, floral notes, and a spicy background. On the palate, it is structured, elegant, and with a persistent finish.
