The production of this wine is very similar to the rest of the wines from this winery (Dehesa de los LLanos). Once the manual harvest is done and the optimal bunches are selected, a cold maceration is prepared. Fermentation is also carried out at 26°C in steel tanks. Once this process is finished, it undergoes aging in French oak barrels for 12 months.
A good pairing that would accompany the Cima Mazacruz Red Wine would be game meat, ribeye steak, or Manchego cheese.
The alcohol content of the Cima Mazacruz Red Wine 2009 is 14.5%. The ideal serving temperature for this wine is 18°C.
