All the elaboration of the Casa Santoña anchovies is done using completely traditional and artisanal methods, dedicating the necessary time to each fillet to, on one hand, reduce the salt concentration, and on the other hand, remove all the bones and ultimately achieve the best flavors of the fish. The finished anchovies are packaged for preservation in neutral oil (sunflower) and if desired, can be served with a few drops of suitable olive oil.

Fat-soluble vitamins like A and D, contributing to tissue and skin regeneration, promoting resistance to infections, and necessary for the development of the nervous system and night vision.
Vitamin D helps maintain blood calcium levels and promotes its absorption and fixation. Minerals, magnesium and iodine.
