During its curing process of 1 to 3 months, it develops a firm and slightly buttery texture, with a gentle aroma and edible rind. Its flavor is clean, balanced, and persistent, with milky notes that caress the palate without causing discomfort.
Each piece is made with the same care and traditional technique as our classic semi-cured cheeses, but with a key ingredient that makes the difference: lactase. Thus, our first artisan lactose-free goat cheese is born, an inclusive gastronomic gem that does not sacrifice quality or character.
Ideal for cheese boards, appetizers, or pairings with white wines and nuts. Because the pleasure of a good cheese should be accessible to everyone.
From the Doña Leonor dairy, they wanted to recover the ancient cheese-making tradition of Alburquerque (an Extremaduran land in the Sierra de San Pedro) which is given to them by the unique method of pasturing from ancient times.
In this dairy, they have managed to combine artisanal production with an innovative spirit. The result is their cheeses, which are not only exquisite but also unique in their characteristics.
