A vermouth with soul, the result of collaboration between the chefs of El Ermitaño (1★ Michelin) and winemaker Bernardo Fariña. A tribute to their mother, Sina, it combines a base of Verdejo with botanicals such as wormwood, gentian, citrus and spices. Elegant, herbaceous and balanced.
Born from the sensitivity and passion of chefs Pedro Mario and Óscar Pérez (El Ermitaño Restaurant - 1 Michelin star), The Vermouth of Sina is much more than a drink: it is a tribute to memory, family, and tradition.
Dedicated to their mother, Sina, a Zamorana cook and soul of the restaurant, this vermouth has been created with her direct participation, bringing her delicate palate, expert sense of smell, and that touch of elegance that permeates everything she does.
To shape this project, the Pérez brothers collaborated with Bernardo Fariña, a creative winemaker with a restless soul, who was able to interpret the restaurant's vision to bring to life a unique, subtle, and balanced vermouth. The high-quality wine base combines mainly Verdejo with a touch of Pinot Gris, and is enriched with botanicals such as wormwood, gentian, orange peel, clove, cinnamon, and citrus.
The result is a delicate and personality-filled vermouth, where herbal notes intertwine with the elegance of bitters and well-measured sweetness. Ideal for enjoying on its own, with ice, or in cocktails.
The label, a gem in itself, shows an image of Sina in her youth, behind the family bar, captured over 60 years ago by a traveler. A photograph full of history, emotion, and authenticity.
