Spanish pine nut
The pine (Pinus pinea), a species native to the Mediterranean regions, already known since ancient times, is a majestic tree that can reach 25 m in height. Its fruit (strobili), the pine cones, are solitary, formed by woody scales between which are arranged the seeds, large and covered with a woody shell, covered with a blackish powder, in whose inner part is housed the edible embryo.
The pineapple, treasure of the Mediterranean diet, is a fruit very rich in starch and oils (50% of good quality fats, predominantly mono and polyunsaturated fatty acids; they are preserved for a short time, because their fat goes rancid easily); besides having a pleasant taste, pineapples have a high protein content (20% of its weight); the Roman legionaries carried pine nuts as part of their campaign supplies.
