Elaboration and Aging
Terras Gauda belongs to the Rias Baixas Designation of Origin, specifically to the O Rosal area. Made with 70% Albariño, 18% Caiño, and 12% Loureiro.
The harvest is done manually, and the grapes are transported in 20 kg boxes to avoid premature breakage of the berries before they reach the winery.
The different varieties are vinified separately. First, they undergo cold maceration, remaining in contact with the skins to extract their delicate aromas.
Fermentation takes place at a low temperature in stainless steel tanks with natural yeasts from the vineyards themselves.
Finally, a blend of the different varieties is made, and it is cold stabilized until it is filtered and bottled.
Tasting Note for Terras Gauda
- Appearance: Terras Gauda has a straw yellow color with slight golden reflections. Clean and very bright.
- Nose: Clean, defined, expressive nose with high aromatic intensity, highlighting above all white stone fruits and citrus fruits that combine with balsamic, floral, and slight herbaceous notes.
- Palate: A friendly entry on the palate, with volume, it is fleshy, with a smooth texture and a marked, integrated, and defined acidity that gives it a lot of freshness overall. Long finish with notable persistence and a fruity character with saline hints.
Pairing
Appetizers, salads, duck, grilled seafood, seafood in sauce, oily fish, grilled white fish, spicy fish stews, and fish stew.
It is recommended to serve at a temperature of 8ºC.
