The Macallan distillery is probably one of the most famous brands in the whisky industry today. The distillery is three miles from Craigellachie, which is the heart of the Speyside region. Although The Macallan is located in the heart of Speyside, they have labelled it as a Highland malt. The distillery was founded in 1824 and was named "Elchies Distillery". The Macallan has 8 wash stills and 18 spirit stills and produces around 8,000,000 litres a year. In 2001, The Macallan opened a new visitor centre. The tour offered by The Macallan is very in depth and is excellent if you are just starting out and learning all about whisky. It shows all the processes and maturation right down to microscopic slides so you can understand what goes on. Well worth a visit.
Nose: Citrus fruits, lemon and orange, sweetened with notes of sultanas. Orange notes become more prominent with oak development. Lingering cinnamon, vanilla and light caramel, with a hint of chocolate and wood spice balance the complex aroma. Flavour: Light, spicy wood resins (clove and ginger) with smoky oak. Layers of citrus fruits and a touch of vanilla sweetness.
